- Haft seen, denoting seven items beginning with the letter seen (the 15th letter in the Persian alphabetس )’, is one of the components of the rituals of the New Year’s day (Nauroz) festival observed by most Iranians, the items are traditionally displayed on the Sofra-ye haft sin, sofra (is a dining cloth that every household spreads out on the floor or on a table) the 'seen' items are traditionally as follows: Sabza (ear of wheat or barley grown to the height of a few inches), a bowl of samanu (is a sweet paste made from germinated wheat and wheat flour), sinjid: oleaster, sirka: vinegar, seb: apple, ser: garlic cloves (formerly with the roots dyed red, blue and green to resemble colored tassels), Sumaq: sumac
